    عندي لها السبق على الدوام

    In Baalbek lies al-Khawwam’s paradise;

In my eyes, it always takes first place.

Ah, what a verdant paradise it is!

    Its springs flow guiltlessly.

Its waters are like strained honey,

And describing it in verse cannot do it justice.

Its gentle breeze, for the ailing,

    Brings healing beyond compare.

Its trees, beyond reproach, screen out

The sun’s blaze each day in summer.

Its food would truly have pleased,

Had its cook perfected his skill.

For he may be skilled at varying dishes,

Except for certain practices he deemed arts:

So his quails turned into crows,

And I tasted a wolf in his partridge.

For he thinks ghee tastes like death,

And does not believe in frying without oil.

And nothing equals ghee for cooking,

If it tastes fine to those who know the art.

And if the oil is cheap,

I find its taste like that of bitter aloes.

So if he has favored frugality,

He has indeed increased the owner’s earnings.

For a sought-after hotel, however high it rises,

Excellence in cooking is reckoned foremost.
